Smoked Chorizo Queso Recipe

  • 1 block Velveeta
  • 1lb browned chorizo
  • 1 can Rotel (medium)
  • 1 lime
  • 1 full jalapeno
  • Jack of All Rubs
  • 1 bag pepper jack cheese
  • 1 beer of your choice
  • 1 bag of cheddar cheese



  1. Mix Velveeta, chorizo, Rotel, juice of one lime, 1 diced up jalapeno, a healthy layer of Jack of All Rubs, 1 bag of pepper jack cheese and one beer of your choice
  2. Cover with foil
  3. Add to your smoker at 225 degrees
  4. Stir every 15 minutes
  5. After 30 minutes add another bag of cheddar cheese
  6. Stir thoroughly 
  7. When thoroughly melted and mixed, pull off smoker
  8. Enjoy!
