Smoked Chorizo Queso Recipe

Ingredients

  • 1 block Velveeta
  • 1lb browned chorizo
  • 1 can Rotel (medium)
  • 1 lime
  • 1 full jalapeno
  • Grillheads Jack of All Rubs
  • 1 bag pepper jack cheese
  • 1 beer of your choice
  • 1 bag of cheddar cheese

Instructions

  1. Mix Velveeta, chorizo, Rotel, juice of one lime, 1 diced-up jalapeno, a healthy layer of Grillheads Jack of All Rubs, 1 bag of pepper jack cheese, and one beer of your choice
  2. Cover with foil
  3. Add to your smoker at 225 degrees
  4. Stir every 15 minutes
  5. After 30 minutes add another bag of cheddar cheese
  6. Stir thoroughly 
  7. When thoroughly melted and mixed, pull off the  smoker
  8. Enjoy!
